What programs it is possible to write video from game in 3840х2160 in 3D-stereo?
In Full-Hd and 720p I use FRAPS. But if I use FRAPS for 4K3D recording, this video not playable with any videoplayers (as NVidia Player, Stereoscopic Player and other)

You need to find out what compression format that it's recording in and perhaps add codecs to the players.
It's probably H265

I am using the following method :
For capture you must use Geforce experience.

For a smooth video recording not use in-game anti aliasing method. (FXAA no problem) otherwise Left-Right eyes sync problem occurs.
For those who use a monitor smaller than 4K:
To improve the image quality & performance use Dynamic Super Resolution and v-sync OFF . Video will be recorded in compressed H.264/MPEG-4 code.
