Once you have the DVI cable issue sorted out, the place to choose 120Hz will be in the 'Change Resolution' part of nVidia Control Panel.
I have the same monitor and I have to say that I am very happy with the difference 120Hz brings compared to my old monitor's 60Hz. I kept reading that human eye cannot distinguish more than 60 frames per second. How wrong that turned out to be!
I only have couple of games I choose to play in 3D, but all the rest are in glorious 120Hz 2D.

Tried to connect via both HDMI and DVI as a single monitor or as a 2-3 monitor setup... nothing seems to give me 120 hz.
I am on Windows 7, if that helps =(
