I have an i7, 12GB RAM with a gtx 570 as well as 2 x i5 2500 with gtx 560s . They are all running 30" Dell monitors (1 each).
I purchased and tried to use nVidia 3D glasses on these monitors to no avail -- not sure if they support it or I am doing something wrong.
I also would love to move from 3 systems to a single i7 with the 3 30" dells connected for 2D surround view. I don't care if I have to use the cards from the other i5s or buy something else, but I can't wait to try 2D surround view with the 3 x 30" monitors.
How should I do this so it works correctly for desktop apps as well as gaming?

There is no 30 inch monitor that supports 3D, the largest available is 27 inch.
The cards have to have the same Chip in them and I believe the same amount of memory i.e. you should be able to use the 2 560's but not a 560 and a 570

As others have said, there are no 30" monitors that support 3D vision, but more to the point, there are no 2560x1600 resolution monitors that support 3D vision. The best you'll be able to do is 1920x1080 and triple it up for the limited amount of games that work correctly with surround.
The problem here is not just the lack of available monitors, but actually the cable technology. 1920x1080@120Hz (60 frames per eye) has blown past the capabilities of HDMI and used up most of the availabe bandwidth in a DVI-D cable. 2560x1600@120Hz would require about twice that bandwidth and no one has come up with that standard yet.

2D Surround requires 3 monitors and two video cards in SLI
As an aside you'll likely find it challenging to get decent performance in surround on those monitors because of the massive resolution.
