If you want perfect 3d go SLI....
Then every game will run smooth at the highest setting ,plus the noise and temps of the card will be lower too !
If you haven't got the money one 580 will do,but games like Metro2033 and Mafia2 will have some points in the game were one videocard will have it difficult... < 30 fps
I run two 480 in SLI,and even with three monitors hooked up I have an average FPS of around 48 FPS.

Intel I7 3820 3.8 Ghz,MSI MS7760 Motherboard, 6GB )2x MSI GTX670 (SLI),OCZ Vertex 230Gb SSD,OCZ Agility 120Gb SSD, Asus 3D VG278HR ,Optoma HD67 3D DLP Beamer with 95inch 2.5 gain screen.
I thought SLI was having awful problems in 3D with the last few driver releases - which really slammed the 500 series because they require the latest drivers??
Anyway... it depends completely on what sort of games you play, just like in 2D. If you want very high frame rates in 3D while playing Crysis maxxed out at 1920x1200 then yeah, whatever you can afford is good. If you are more into the role playing games or MMO's where there's really no need for more than 30 frames per second, then a single 570 should be enough for many years to come. (Certainly until Sony/Microsoft cough up new console platforms.)

SLI or not is all down to does the game have good SLI scaling.
I only went SLI because I wanted surround, which does have horrible performance issues in the latest drivers.
A single 570 will be enough to have a decent 3D experience @ 1900x1080, but you will have to turn off some eye candy in most games or accept low framerates.
For smooth gameplay, you will need a setup that maintains a minimum framerate of 120 Hz (assuming you have a 120 Hz LCD). This is particularly important in 3D because you have VSync on, so any drops below 120fps will basically cut your framerate in half with VSync.
3D Vision has a roughly 40% performance hit. SLI will gain you roughly 40% performance in most games. So, if you want to approximate 3D performance in a game with SLI, just look at the single card performance. For single card 3D performance just knock off 40% from the fps numbers.
Yes, the new 5xx card drivers are not very good, but for me that just means reducing AA in some games and an inability to play Metro 2033 higher than DX9. It definitely works.
