ive been considering upgrading my system from a single 780ti to 2 of them and get 3 monitors, but be4 i do i would love to know if it's possible to run 3 monitors and use 3d vision across them all without any problems. ASUS VG248QE is the screens i would be using.

Yep. It's called 3d vision surround, and with 2x780ti I'd imagine you'll have a pretty good time of it. 3d surround isn't entirely without problems though, as you combine the problems in 3d with the problems in surround.
However a great many games receive community patches to fix both 3d and surround, so for the most part it should be great.
You might want to tell us what games you want to play though, and we can probably tell you what to expect.

would mostly be grid 2 and dirt 3 in 3d, maybe assassins creed BF if it gets alittle better 3d rating in the future. only when i asked at the hardware store i was told to minimum get 1 graphics card pr monitor wich i couldnt really understand why. is there any truth to that statement or is he full of crap :)

He's not entirely full of crap, but he is partly.
More than two graphics cards is pointless in 3d. Cards 1 and 2 render left and right "eyes", cards 3 and 4 do absolutely nothing at all. Seriously, nothing at all. It doesn't help in the slightest to have more than 2 cards for 3d.
However 2 is definitely a big step up from 1, you often get close to 100% performance boost in 3d (as opposed to 40% or so in 2d). This is because in 3d, each card can render one "eye".
As for the games you've listed:
Black Flag works in "fake" 3d mode. This isn't great, and isn't (officially) supported on surround (though people have found ways to make it work). There are people who may be able to fix it, but that's still a long way off and not guaranteed.
Dirt 3 apparently works reasonably well with the right settings, though I've not seen anyone try it in a while, so it could have broken with newer drivers. Maybe someone else here can give more insight into that.
