So I went out and bought another 970 for SLI today just so I can play this in higher settings, but I'm having a hell of time getting things working on higher settings. Things I've learned:
1) Using MP3 profile results in near perfect SLI scaling (don't need FC3 sli bits), both GPUs at 98%+.
2) I have to disable 3D as soon as the game starts, as when you 'press key to continue' and the game quickly minimizes it will never recover and just stays at black screen. Once at the main menu or in the game world you can re-enable 3D just fine.
3) Setting 'Terrain' to Medium is a must. Setting this any higher results in crushing FPS drops for no apparent reason.
4) Upping certain graphics settings will cause my computer to spontaneously reboot!!! So far 'Geometry' and 2xMSAA seem to cause this to happen. I will test more over time as I can but I've already caused my comp to reboot like 30-40 times in the past 3 hours. I'm just going to try playing for a while on settings I know work for now. For now it seems 'Textures' to Ultra and Shadows to 'soft shadows' works OK. I'm going to try to slowly up other settings over time.
I tested all of the above with the various profile configs -- FC4 with StereoDX10Flags, null profile with fc3 bits, MP3 profile with FC3 bits -- with the same results across the board; have to disable 3D at start, upping certain settings causes spontaneous reboot. I am not wholly certain about SLI scaling in the other profiles as I didn't discover the Terrain to medium setting yet, so they may be viable too, but certainly MP3 vanilla profile seems to works well.
(I tried playing BF4 for a while at 150% supersample with all settings maxed just to make sure SLI is working properly or that the reboots weren't being caused by a power draw issue, it played just fine with all 4 CPUs and both GPUs maxed. Also tried re-appyling the patch, verifying game files, and clean driver install)
That's nearly sure to be a power supply problem. The fact that it runs in other games doesn't necessarily indicate it's working correctly, because every game is different in terms of draw. Rebooting altogether instead of crashing happens only in rare cases. You are dramatically overclocking the 2500K, and there might not be enough headroom left for minor voltage burbles.
Your 850 Corsair should be up for it, but if it's old it might have enough degradation. Worth taking it all apart, unplug all of the power supply plugs and replug them to make sure the contacts are good. Clean the filters, make sure it's not overheating, the usual sort of stuff.
Could conceivably also be an overheating situation, but generally that doesn't result in reboot, it just throttles. Worth checking though.

Back with an update. I'm 9-10 hours in, and just wanted to report that an entire area called Shangri-la (where it's almost like some dream and you have a tiger with you) is completely broken. I had to disable 3d for the 15-20 min that I spent passing it.
Everything else seems nearly perfect.
I have Terrain effects set to low - they take a lot of power and deliver minimal visual effect (so i don`t need them anyway). Running on MP3 profile as well. Everything else is set on Ultra. Gtx 680 Sli on 1920x1080.
Try to put everything on Low and start turning one effect at the time and see what is really affecting your performance.
Also i`m running latest drivers 347.52
Cool. Set terrain to medium and it made a huge difference. Also used mp3 profile as is (was replacing sli bits with fc3 ones). Miles better. Am running 780ti SLI btw. Thanks for the tip, now running smoothly.

Hmmm, maybe. CPU is currently at stock speed and voltage. I tried unplugging 2 mechanical drives, the DVD drive, and some fans but it didn't help. The PSU is very old though (8 years?) so I guess I'll try replacing it.

If it's that old, there is an off chance that it is a split rail design as well (12V). If you overload one rail you could get this effect. Worth taking a look to see if you can balance the load on different rails by using different connectors, put the video cards on the opposite rail of the CPU for example.

I'm almost through the campaign and the amount of new broken effects I'm finding is slowing down, so I'll be posting this on the blog pretty soon (I still need to check the issues in the DLC that chtiblue noted).
It sounds like on the blog I should advise SLI users to use the May Payne 3 profile with terrain set to medium or lower? Does anyone with SLI still have any problems with that configuration?

Yes, medium for terrain is good, high - is the problem if using SLI.
BTW the fix is almost perfect, thank you so much DarkStar
I still cant get used to this weird convergence when right click... looks a bit painful

Its adjustable, check d3dx.ini and "Convergence override while aiming" section. I found default value of 0.01 to be slightly too deep(although it was still best for aiming), im using 0.25 instead. I think default value was good when i played on a monitor but that custom value suited me better for my projector setup.
And if i didnt already said it, thank you very much for the fix! Looks so great.

Fix is up on the blog:
http://helixmod.blogspot.com.au/2015/03/far-cry-4.html
Thanks everyone :)
Edit: Completely forgot to mention the changes since 0.7:
- Fixed the remaining environmental lighting shaders with vegetation=high (fog & environment reflections in Himalayas and Shangri-La should now be fixed).
- Fixed distant lights at night
- A few more halos fixed, a few more reflections
- All reflection adjustments are now conditional on matching render target dimensions known to be used for the water to stop them occasionally messing up something else.
- Weapon sight can be set to a different depth to the rest of the UI if desired (by default both are 99.5% separation)

@DarkStarSword and @Bo3b - great effort completing this, it's a difficult game to work on, and the results look fantastic. I am looking forward to finally playing it properly :-) I am still out of commission "modding-wise" (work and educational commitments are still too time consuming), though I have managed to play DAI at last and will definitely fit FC4 in somewhere as well. Screenshots on the blog look great.
