Good question, the short answer for movies is 60hz or 120hz are the same. I'm not too sure about what Youtube has to offer, but in terms of movies, they're all 24 frames per second. When viewing them at 60hz, the display uses 3:2 pulldown, where by even frames are shown 3 times (3hz) and odd frames are shown 2 times (2hz), equaling 24 original frames per second displayed at 60hz. Hard to say if they're the same or not, but if it's possible, I [i]think[/i] you'd switch between 24fps mode and 3:2 pulldown mode using the Nvidia control panel. On both of my projectors, 24fps mode is only activated when fed a 24fps signal; there's no menu option in the projector. Specifically, I use the PS3. There's options on the PS3 to enable or disable 24fps output for DVDs and Blu-ray. If the projector gets a 24 fps signal from the PS3, it goes into 24fps mode. Otherwise, it uses 3:2 pulldown.

120Hz is the better setting, as pointed out at 60Hz you end up with a 3:2 cadence which means the time-per-frame is uneven
At 120Hz, you get a 5:1 cadence which allows each frame the same time on screen. Same as you see in the cinema
There will only be a 23/24Hz option if you elect to play back the movie at 1920x1080 desktop resolution. 720/24 is not a standard format, although it can be forced as a custom resolution in CP on most projectors. On both of my projectors, 24fps mode is only activated when fed a 24fps signal; there's no menu option in the projector. Specifically, I use the PS3. There's options on the PS3 to enable or disable 24fps output for DVDs and Blu-ray. If the projector gets a 24 fps signal from the PS3, it goes into 24fps mode. Otherwise, it uses 3:2 pulldown.
For a 120hz projector, I'm really not sure how it handles it. Either it takes a 24fps signal and multiplies each frame by 5 to get 120hz with each frame even, or it uses 3:2 pulldown to get uneven (put perhaps perceptually smoother) 60hz then doubles it to uneven 120hz. Perhaps it depends on how the software (PS3 or PC) handles it too. My best guess is an Nvidia control panel setting of 60hz will give you 3:2 pulldown, and a setting of 120hz will give you an even 24fps mode.
Lots of guessing though. Maybe I'll correct myself again after I've had time to sleep on it.

At 120Hz, you get a 5:1 cadence which allows each frame the same time on screen. Same as you see in the cinema
There will only be a 23/24Hz option if you elect to play back the movie at 1920x1080 desktop resolution. 720/24 is not a standard format, although it can be forced as a custom resolution in CP on most projectors. Pulldown/telecine is used when referring to interlaced.. with progressive it's just frame duplication or dupe removal
I have been silently waiting for a reasonably priced 1080p/120 projector for a while now, it seems like it just isn't going to happen since there is not a viable market for it
