And the dilema is deciding whether to get a nvidia gtx 460/470/480 or to get the quadro 580/1700/1800,
or possibly an ATI radeon 4870, 5750,5770
and im not into gaming or any of that, although im not sure whether getting such a computer will draw me to it, but atm, not a gamer at all, and not really looking to become one.

You can also consider quadro 4000. It is based on fermi and is quite good for your work.

If you are not into gaming, then the Quadro series (especially the ones based of the new fermi-architecture) is your best bet as these are aimed at CAD and "Digital Content Creation" market.

If your budget is $1400 for everything, you cannot afford a Quadro card except the oldest, crappiest ones. You would be best off with one of the consumer level Fermi cards. The features that Quadros add are practically non-existent. The major benefit is a level of support you do not need, as you are not a corporation and are obviously a tech savvy user given that you are building a PC and posting here. For what you are doing, I would probably recommend the 460 with 1GB.

We decided to grab a 480 since he had the budget, but what we found is that everything was CPU bound. Certainly the rendering was, using 100% of all 8 threads on the overclocked i7-930 we got him. Surprisingly, though, even the 3DS Max viewport seemed to be CPU bound. The graphics card was certainly doing a lot of work as we used it, but the the viewport also needs CPU cycles and is unfortunately single threaded.
So its most important to get speed and cores for rendering and then to get the fastest CPU speed with enough GPU to keep up for the viewport The 460 should do this just fine. I would spend your money first on the best Hyperthreaded i7 CPU you can afford (AMD does not have single thread clock for clock performance), next on some decent cooling (a top air cooler mounted with some Artic Silver 5 should be fine) so you can run a huge but stable CPU overclock, and only then on your GPU. We put 12GB of RAM in his workstation, but you'll probably be fine with 6GB. Spend the money to make sure it supports high speed (like DDR3-1600) so it can effortlessly handle the overclock you are going to throw at the CPU.
Also, unlike a gamer who would only lose his saved games, your data is actually important and irreplaceable. Make sure you budget in some back up. i am really glad i dont have to invest in an expensive quadro,
And yh i have got an external harddrive but it is only 320gb so i might need to get one of a higher size, or 2!!

That setup should work just fine. For motherboards you don't need anything fancy. I've done a couple of 930 builds now with the ASRock X58 Extreme which can be had pretty cheap on NewEgg and they've worked out great.

all this on such programs like maya, 3ds max, softimage, zbrush, Adobe after effects, sony vegas pro, adobe Premiere etc
And the dilema is deciding whether to get a nvidia gtx 460/470/480 or to get the quadro 580/1700/1800,
or possibly an ATI radeon 4870, 5750,5770
and im not into gaming or any of that, although im not sure whether getting such a computer will draw me to it, but atm, not a gamer at all, and not really looking to become one.
this isnt my profession but i really enjoy doing it as a hobby
so i wouldnt really like to spend alot of money for a hobby.
ATM my budget would be about £1000
which is about $1400 for everything, graphics card, cpu, ram etc.
also i need something which could handle high polys, preferbly a few million? or around there.
And as i like doing different projects all uses of all programs will need to be well usable, for eg, modeling, texturing, endering, rigging, animation in all 3D programs,
and i will also be using boujou. And rendering, compositing in video programs, and matte painting in photoshop.

You can also consider quadro 4000. It is based on fermi and is quite good for your work.

We decided to grab a 480 since he had the budget, but what we found is that everything was CPU bound. Certainly the rendering was, using 100% of all 8 threads on the overclocked i7-930 we got him. Surprisingly, though, even the 3DS Max viewport seemed to be CPU bound. The graphics card was certainly doing a lot of work as we used it, but the the viewport also needs CPU cycles and is unfortunately single threaded.
So its most important to get speed and cores for rendering and then to get the fastest CPU speed with enough GPU to keep up for the viewport The 460 should do this just fine. I would spend your money first on the best Hyperthreaded i7 CPU you can afford (AMD does not have single thread clock for clock performance), next on some decent cooling (a top air cooler mounted with some Artic Silver 5 should be fine) so you can run a huge but stable CPU overclock, and only then on your GPU. We put 12GB of RAM in his workstation, but you'll probably be fine with 6GB. Spend the money to make sure it supports high speed (like DDR3-1600) so it can effortlessly handle the overclock you are going to throw at the CPU.
Also, unlike a gamer who would only lose his saved games, your data is actually important and irreplaceable. Make sure you budget in some back up. I would recommend grabbing a second 1TB hard drive and run them in RAID 1. Or get an external (eSATA) hard drive and do regular backups. For my friend's computer, who was doing this professionally, we had both RAID 1 and an external hard drive that is stored off-site (in case his home office burns down, is vandalized, etc). And yh i have got an external harddrive but it is only 320gb so i might need to get one of a higher size, or 2!!
