One of the virtual theme park games has this, but I can't remember which one off the top of my head. Maybe Roller Coaster Tycoon? You build the roller coaster and then you can ride on them.

There is also No Limits 2 [url]http://www.nolimitscoaster.com/index.php[/url] which is more of a sim than a game. You can download community built tracks and this new version allows you to control all aspects of the roller coaster such as brake runs, moving cars on and off the tracks etc as if you were controlling the real thing. It's really cool.
