I am happy to inform you that I have figured a way to play Fable in stereo with the nvidia drivers, and it works really great.
So this is how it works:
1. disable stereo from nvidia control panel
2. run fable and load autosave
3. press ctrl+esc ord start menu button, or ctrl+alt+del
4. turn on stereo from nvidia control panel
5 enjoy the game in stereo

PS.: haven't tested yet if the machine will hold up withouth restart when you exit to the main menu, so i recommend, reversing the procedure, before exiting the game or just terminating the process from the task manager

Unfortuanately I spoke too soon.
Turns out machine resets every time a new area has to be loaded, obviously it has something to do with the menu and the loading screen itself. Therefore to be playable in stereo the game the stereo option must be disabled and reenalbled every time a new area is being loaded, which pretty much sucks. I personally finished the game in 2d, and now having seen it's beauty in 3d, i'm really sorry there's no normal way to replay it like that. Nvidia has to release a new stereo drivers version with a special fix for Fable, after all i thought Nvidia and Microsoft were buddys, how about a little support here :)
