I also preordered the 5K BE OLED model but since the OLED model has a significantly higher screen-door effect maybe I will cancel that one (I am still waiting for a particular review of the 5K OLED)
In case I cancel the 5K OLED maybe I'll switch that preorder with the 8K model but since the 5K Plus is widely regarded as the superior headset with way more sharpness and clarity I'll most likely stick with my 5K Plus!

With the 200 degree FOV aren't regular VR games stretched to fill the screen. I recall reading this in the SDK for either the Pimax or Star VR, I forget which.
If stretched, is it very noticeable? If so, I imagine something like Skyrim could be hacked to match the correct FOV without stretching.

I definitely can't confirm this! No game that I tested so far showed any stretching-issues! Skyrim just looks gorgeous with the wide FOV with absolutely no stretching at all.
To be honest I even never noticed any reports about stretching issues (and I have a keen eye on everything VR). To cut it short: Setting everything up with the Pimax can be a bit of a chore but you definitely don't have to worry about stretching issues with the Pimax.

It's definitely worth it! I owned or still own practically every major headset on the market (Rift, Vive, Vive Pro, Odyssey, Odyssey Plus, PSVR, Pimax 5K Plus) and I can tell you that the wide FOV alone is absolutely worth it! It's a total game-changer!
All the other headsets may differ in screen-door effect and some other areas but they all share the same small FOV. The Pimax is literally an eye-opener here. It doesn't hurt that due to the high native resolution of 250x1440 per eye this headset also delivers unmatched clarity and sharpness which is an absolute delight. So I gladly choose the Pimax because even without that special filter that the Odyssey Plus uses to get rid of the SDE the significantly higher resolution of the Pimax gives you very little SDE combined with unmatched sharpness and clarity. While all that is very nice to have the single most important point here is definitely the 200 degress (diagonal) FOV. I dare to say that once you have seen it yourself you can't go back to the other "binocular-style" headsets.
The downside of the Pimax 5K Plus and Pimax 8K should be the LCD-screens. Being exclusively used to OLED-VR screens before I got the Pimax I feared that the Pimax would shock me in that regard. I must say it didn't. I am totally fine with the color- and even the blacks-quality of those LCD screens. Wasn't shocked at all.

I can't find the article. But it said something along the lines of...
VR games built for 100 degree FOVs will not work correctly on ultra wide FOV VR headsets like StarVR and Pimax. To get around this, they would slightly stretch the main image and add some type of distortion to the edges.
It's too bad StarVR went tits up, hopefully Acer finds a buyer that does something with it. It seems Pimax and StarVR are the only visionaries that understand greater FOV = greater immersion.

Sorry, I forgot to answer the wired/wireless question. A wireless solution is one of the stretch goals for the Pimax so yes it's at least something they already think about but I am pretty sure we won't see a wireless solution for the Pimax anytime soon...

It's a shame they went down exactly when the headset was ready and was already praised by everyone who got lucky and already tried it. That said the headset is still in existence so there is hope (just like you mentioned) we will see it on the market one day.
But keep the following in mind:
The StarVR One (latest model) has 210 degrees FOV which perfectly matches the human FOV. But while the first model (StarVR) had a resolution of 5120x1440 across both eyes (exactly the same native resolution that the Pimax has) the newer model (Star VR One) features AMOLED displays with "only" 3660x1464 across both eyes which is significantly lower than Pimax at even more FOV. So I am not so sure how I would feel about the SDE of the StarVR One.....
But there is another glimpse of hope:

I would say in its default state the Pimax and glasses may be a no-go. But since there are aftermarket-solutions available for almost every HMD like thicker facepads I wouldn't turn away from the Pimax just because of this issue. Also you could try to come up with a custom made solution. All you need to do is increase the distance between the lenses and your eyes.
