I don't see why a director would post-convert for any reason other than the cost of filming in 3d.
I also hope 24hz goes up. 48 minimum, 70 ideal. I use a program called smooth video project to interpolate frames when I'm watching stuff on my PC, and that works great.
Deep focus is fine as an artist taste in pictures/art but forcing it on a user is something you shouldnt do in anything in motion just because the human eye doesnt work that way.
Films/games already do plenty of things that are contrary to the way the human eye operates: zooming, panning, lens flares, HUDs, allowing high visibility at night, 3rd-person view, rectangular viewport, edited cutscenes, displaying out-of-gamut colours in the world, locking your gun to where you are looking, stylised/cartoonish character design, and so on.
You've said before that believable realism, or "immersion" as you call it, is very important for you. So I understand that you're coming at it from this mindset. But I think it basically comes down to personal preference. What might seem to like artistic license clumsily getting in the way of realism, may seem to others like an enjoyable and valid artistic embellishment or augmentation of reality.
