I have installed and started ME1 about three times since it came out, and I never get much farther than landing on the planet in the beginning.
But I loved KOTOR 1 & 2, which had a similar dialogue and combat system. Maybe I'm just burned out on that particular Bioware style?
Guess I'll have to wait for a Mass Effect motion picture, because I hear the storyline is great
+1 on the Mass Effect recommendation. Its very, very well made on the whole. I would definitely start with ME1 as the story starts there and the game is better in a few ways (all not ways) than 2 and 3. Just make sure to stop and take in the views at certain points. As with many games, it really helps to put yourself in the game as if you were there. If you do, the fallout from the storyline should hopefully hit you harder.
X:Rebirth is one that i've bookmarked to check out later. Apparently the devs are known for releasing a partly finished game and then releasing patches for it to make i much better than it was at release. They are also known for allowing modding, which has already made the game a lot better in my opinion. Modders have streamlined some of the tedious elements in the game, offered many graphical improvements, overhauled the economy system, fixing it in many areas and there are all sorts of mods, like giving Newtonian physics to the spacecraft or making space blacker, etc. Check out some of the negative reviews though before buying it though, i'd recommend video reviews.

+1 on the Mass Effect recommendation. Its very, very well made on the whole. If you cant or dont want to play Mass Effect in 3D, then play it in 2D.
I like 3D but, honestly, 3D does not make a game become good. 3D only makes a game more immersive and interesting to look at. Mass effect in 2D is extremely immersive (because of the story and characters) and still interesting enough to look at.

I prefer a game with more stress on things like exploration and construction and if there's any combat it would be piloting a ship. Looks like that Evochron game would be more my thing.

I never played Eve but it seems to be highly rated.
I have played Star trek online. Space combat can be fun, but everything else is not so good.

A friend used to play DarkStar One when it came out, perhaps it might interest you. Or maybe the X-Series.
No idea about 3D vision compatibility, since they are old games.

Just set the combat to easy mode and you won't even have to think about it.
