Do you think it's worth it, FPS wise? I have looked at some tests (Witcher 3) and it seems to be like 18 FPS faster in those really high resolutions (2K+), but the higher up it goes (3840x2160) the difference becomes less noticeable ("only" 10 FPS faster in Witcher 3).
So playing at just 720p, the 1080 card should be quite a bit faster (maybe around 30 FPS faster, do you think?). A 30 FPS difference would be worth it imo since it would be very noticeable and some of the added performance could be spent on e.g DSR or other stuff (if i can ever get DSR to work with my projector..)

Going from Titan X (Maxwell) to 1080 I see roughly a 25% increase in performance. If you look at the roadmap for NVidia there is only GPU left in Pascal product line that is GP-100 which will use HBM2 memory.

One of the huge advantages of playing on a projector, is that you run at 720p, but it's not grainy because of the second viewpoint.
Since you run at 720p, that dramatically lowers the load on your GPU.
For gaming on projector, the GTX 1080 would be a waste of money. You won't get ANY improvement in performance there, because you are going to be CPU bound at this low resolution.
With a 980ti, you can even do super-sampling to improve the image a bit. At some point with super-sampling it will switch back to GPU bound, but you can likely run 1080p without any frame rate hit at all.

I dont only game on the projector, i also have a 3440x1440 ultrawide screen for some games, but yes, i think i will hold off for now!

A lot of games run ok but newer titles don't, such as dues ex mankind divided, DSR with that game kills performance, it struggles with 1280 x 720 on my system and I have a single GTX 980 with an i5 6600. I thought the 980 would be enough but am thinking of an upgrade as well, so is the consensus a 1080 won't make much difference? Starting to wonder what will give a consistent 60fps in 3D vision these days. Am even looking at using compatibility mode for the better frame rate. I have actually been near just giving up but it's so hard going back to 2D!

The i5-6600 and GTX 980 is a good combo, and should work pretty great for 720p projector. As a general rule, you won't need more than that, although you could SLI for some games or unlock some higher DSR type resolutions.
For Mankind Divided in particular though- that's a bad metric for performance at 720p. The game is woefully underoptimized. Their stated performance target was 1080p@30Hz. That means that once they got it working at that speed, they stopped looking for improvements. We may get some improvements later on, but there isn't anything you can really add when they didn't bother to improve the code.
Performance testing is tricky, but for any given game, try to see what might be running at 100%. That can give you an idea of what to upgrade. That CPU is about as good as it gets at present, you might be able to overclock. And in Mankind Divided be sure to turn off the MSAA, they said it's a performance hog.
A 1080 is only going to make a difference if the GPU is the bottleneck. When running at low resolutions, that's rarely the case, but it can happen. If your GPU is maxed out at 100% usage, then it would make a difference.

As always thanks for the advice bo3b. It's just so frustrating, I'd pay good money to get a decent 3D experience but the developers don't want to know as well as nvidia I guess. At least mankind divided has some kind of 3D support, which makes it bizarre they didn't make the game perform better, guess it was an after thought

Yeah, it's frustrating, because when the 3D is working right it's genuinely stunning. Even 5 years in, I still go Wow!
The real problem is the same old, same old- consoles. They build everything for consoles, can give a rip about PC. That's why it's 1080p@30Hz.
I'm just happy we got a native 3D experience, it's a real surprise.

Yeah I still go wow. I was playing mankind divided in 2d as couldn't be bothered with the hassle thinking yeah I can just about play like this, then checked it out in 3D and thought it looked stunning, the city areas with those sci structures etc. Those environments are made for 3D which makes it such a shame games like that don't work as well as they should....

I wouldn't upgrade from a 980 ti to a 1080 gtx. Particularly if you have a non-reference 980 ti since those overclcock better than the GTX 1080's.
I did and regretted it. Then took I back and got a pascal titan x (which admittedly is a terrible bang for your buck, and will get overshadowed but inevitable 1080ti. But I wanted the best single card for water cooling at the moment, and not have to rip my PC apart.
