before to buy 3 videoprojectors (ACER H5360)
my question is:
Will nvidia 3D video surround work PERFECTLY with applications like POWER DVD 11(3D)?
I'd like to play games but also watch 3D BLURAY DVD.
If not, is there any particular application that play 3D BLURAY with Nvidia?

Well, on the middle screen, means that I will not be able to extend the view over the entire surface of the screen or what?
for example, if I have a 120 inches base screen, can I see my DVD movie wide to 120 inches so using all the surface area of the screen or not?

I use Power DVD 11 3D with nVidia 3D Vision and it works simply beautiful on full screen without any problems so my answer is that it will work 100%.
One thing You need to make sure tough You need to have Blu-Ray 3D capable drive in Your PC. Not many Blu-Ray drives has this ability.
I've got 3d surround and when I want to play a movie, if I don't change my configuration the movie ends up playing on my left monitor. I want it on the middle obviously, so I end up having to disable surround. Kinda a PITA.

It sounds like you want to stretch a 16:9 picture out to 48:9 (or 16:3 to be more accurate). I cannot imagine the picture being watchable even with top/bottom cropping. The image will be severely stretched.

I'm not sure this feature is that useful as the person above explained. Why would you want to see an image either stretched horribly, or cut off?
